Ingredient - Preparation Method
4 cups flour 1 1/2 cups sugar 1 T. baking powder 1 tsp. salt 1 tsp. soda 2 cups cranberries, picked over, washed and sliced 1 cup walnuts or pecans -- chopped 2 tsp. orange rind -- grated 2 eggs -- beaten 1 1/2 cups orange juice 1/2 cup vegetable oil
Sift together dry ingredients. Stir in cranberries, nuts and orange rind. Combine eggs, orange juice and vegetable oil. Add to dry ingredients, stirring until just moistened. Divide batter intobread pans. I made several mini loaves, but should make at least 2 regular loaves. Bake in preheated 375 degree oven 45 - 50 minutes or until done.
