Ingredient - Preparation Method
1 lb. fresh cranberries, washed and picked over 2 quarts water 2 T. orange rind -- grated 6 cinnamon sticks -- 2" long 12 whole cloves 4 cups orange juice 1 1/2 cups sugar -- (1 1/2 to 2) 1/4 cup fresh lemon juice -- (1/4 to 1/2)
In a large saucepan combine cranberries, water, orange rind, cinnamon sticks and cloves. Cook until cranberries are soft; about 10 minutes. Strain. Add orange juice, lemon juice and sugar to cranberry juice. Heat until sugar is dissolved, stirring from time to time.
*Vary the lemon juice and sugar amounts according to desired tartness.
