2 medium onion -- chopped 1/4 cup oleo 2 cans tuna -- drained 2 cups cheddar cheese -- shredded 1 cup Bisquick 1 1/4 cups milk 2 eggs 2 tomatoes -- thinly sliced to taste salt and pepper Instructions
Cook onions in oleo until light brown. Put tuna and 1 cup of the cheese and the onions in bottom of 8x8 greased baking pan. Beat Bisquick, milk, eggs and salt & pepper with wire whisk until almost smooth, about 1 minute. Pour on top of tuna in baking dish. Bake until knife inserted in center comes out clean, 25 to 30 minutes. Top with tomato sliced and remaining cheese. Bake until cheese is melted, 3-5 minutes. June 6, 1995-served this for dinner and it was delicious. I used a vadalia onion and cut the recipe almost in half. I used two kinds of cheese because I ran out of one kind.
